To unravel the mystery of the connection between mozzarella and burrata, let's delve into the story of these milk brothers cheeses. Burrata was born in the mind of a cheese maker from the Puglia region, who didn't want to waste yesterday's mozzarella. So, he decided to stuff it with cream and shredded mozzarella leftovers before closing it with a knot.
If it is a pride of the Italian region of Puglia, it is also thanks to the craftsmanship associated with it: the mozzarella balls are still stuffed by hand with this cream and shredded mozzarella duo. Traditionally, they are all made from buffalo milk. Oh yes, and burrata means "buttery" in Italian, even though it doesn't contain any butter, go figure.
