Mozzarella and burrata, the same battle?

To unravel the mystery of the connection between mozzarella and burrata, let's delve into the story of these milk brothers cheeses. Burrata was born in the mind of a cheese maker from the Puglia region, who didn't want to waste yesterday's mozzarella. So, he decided to stuff it with cream and shredded mozzarella leftovers before closing it with a knot.

If it is a pride of the Italian region of Puglia, it is also thanks to the craftsmanship associated with it: the mozzarella balls are still stuffed by hand with this cream and shredded mozzarella duo. Traditionally, they are all made from buffalo milk. Oh yes, and burrata means "buttery" in Italian, even though it doesn't contain any butter, go figure.

You just need spaghetti or pippe rigate, a ball of burrata, some cherry tomatoes, fresh basil, a white onion, two garlic cloves (bad for breath, good for the heart), a big handful of pine nuts, a generous drizzle of olive oil, and a little salt and pepper.

Pizza burrata, how-to guide: Just like a traditional pizza, spread tomato sauce on a pizza base, bake for 10 minutes at 250°C (thermostat 8). Take out the pizza, add burrata as you wish, and bake again for 3-4 minutes. Some slices of prosciutto, chopped basil, salt, a little chili powder, and that's it. Even simpler than saying hello.

Can pregnant women eat burrata? The answer is yes, as long as they choose a pProduit à base de lait pasteurisé (c'est-à-dire chauffé pendant quinze à vingt secondes à une température comprise entre 72 et 85°C). Et que la mozza soit produite à partir de lait de bufflonne ou de lait de vache (privilégié par les grandes surfaces car plus économique) importe peu puisque dans les deux cas, le lait est pasteurisé avant d'être filé. Ouf.

Pour info, la saison optimale de dégustation, c'est le printemps. Après c'est vous qui voyez. Petit tips avant de choisir également, plus la mozzarelle est grosse, plus ses parfums se préservent dans le temps et plus elle est goûtue.
