After seven years of emotions, explosive flavors, and unforgettable experiences, Chef Balthazar Gonzalez has announced the closing of his restaurant Hédone. The Michelin-starred restaurant, a true institution for food lovers in the Pink City, served its last meal on February 20, 2025.
A bold and passionate chef
His story could have been completely different if he hadn't found an original way to avoid parental punishments... "The only way to not get scolded for bad grades was to cook for them!" he confides. A destiny shaped from childhood, leading him to the kitchens of the greatest, including Joël Robuchon. After being named "Young Talent" by Gault & Millau in 2017, he earned a Michelin star in 2020, showcasing his talent and creativity.

Hédone: pleasure above all
From the very beginning, Hédone has stood out with its extraordinary concept: a single table where all guests share the same menu, at the same time. It was a bold move, which the chef later refined to offer a more classic experience, but still with a limited capacity of 14 diners. The goal? To stay close to the customers and share a vision of instinctive cooking, based on raw and regional products.
Inspired by the Greek goddess of pleasure, Hédone truly lives up to its name. Food lovers who have had the chance to sit at Balthazar Gonzalez’s table will cherish the unforgettable memories.
