With 3,000 square meters of space and 26 food stands, the future Halles de la Cartoucherie in Toulouse will be able to accommodate up to 2,800 visitors. Opening on September 8, 2023, after years of anticipation, these halls will showcase a raw concrete and old building remnants décor. Taking inspiration from Lisbon's famous Mercado da Ribeira (with "only" 400 seats), the Halles de la Cartoucherie will offer a variety of culinary specialties, from butchery to Lebanese, Asian, and Toulouse cuisine, along with the ever-popular street food. It's a culinary journey waiting to be explored!

26 carefully selected addresses chosen from among 450 candidates who all committed to respecting the establishment's philosophy through "sustainable purchasing," "inclusive hiring," waste management, and a concept of "virtuous rent" (the more you play along, the less you pay). In addition to the extensive dining area, Les Halles de la Cartoucherie will also host a bookstore, a climbing wall, squash courts, a breakdance school, a cooking school, a coworking space, and even a 500-seat theater that will open in an annex in February 2024.

The new paradise for foodies

Among the featured addresses, some stands we already know include Graine de Méditerranée (couscous bar), Le Cassoularium, Diabateba (Traditional West African cuisine), and more."West Africa), Kumquat (Vietnamese Canteen), Bien Taypa! (Ceviche bar) or Bao House (Asian street food)... But also some sweet treats with churros from Chuchu Shop and the Molten Cakes from Etienne."
