Ingredients
200g potato pulp
40g white flour
20g grated parmesan cheese
12g beaten egg
1 tbsp olive oil
Half a camembert (or other cheese)
A cup of cream
30g butter
2 shallots
1 clove of garlic
A half glass of calvados
A handful of lamb's lettuce

On a cutting board, mix the flour and parmesan into the potato pulp. Pour the egg in the center of the mixture and add a pinch of salt. Create a homogeneous dough ball then cut it in half. For each piece, roll it into a little ball and lightly press the fork on the side of the gnocchi. Then, place them on a large floured plate and chill them in the fridge. Now, let's prepare the sauce. Chop the shallots and garlic, then sauté them in a pan with butter. Once the mixture is sizzling, flambe it with Calvados, add a cup of cream, and reduce the heat. Cut the camembert into chunks and add it to the sauce. Once the camembert has melted into the cream, blend the mixture to thicken the sauce. Keep it warm on low heat to prevent it from solidifying. To finish, boil the gnocchi in a large pot of salted water until they float. Remove them with a slotted spoon and sauté them in a hot skillet.
