The Editor

The surprise was anticipated, and it has confirmed what many suspected since the opening. Maison Pellestor-Veyrier, located on chemin de Gramont in Colomiers, has entered the Michelin Guide with a star and an additional title that you can't just make up: Young Chef of the Year 2026. This first star, for everyone in the house, feels less like an end and more like a starting point

Agapes and L'Écorce: the two gems of Toulouse

The second Toulouse winner is Agapes, on rue de l'Industrie. Chef Arnaud Darbas, who has worked in prestigious establishments, along with his partner Virginie Béziaud, has created a cozy bistro that hides a truly gourmet plate. The six-course tasting menu offered in the evening has clearly won over the inspectors in red! L'Écorce, on rue de l'Esquille, completes this trio of favorites. Opened in July 2025 by Bertrand Millar, in a setting that regulars will recognize, the restaurant has evidently made a remarkable impression in no time!

Toulouse shines brighter than ever

With these three new stars, Toulouse is joining the ranks of the greats. Pierre Lambinon remains the only chef in the area with two stars at Py'r, surrounded by established figures like Michel Sarran, Stéphane Tournié at Jardins de l'Opéra, and Guillaume Momboisse at Sept. The next generation is making waves, and Michelin has just recognized this officially!
