The story begins in 2013, at Place de la Bourse in Toulouse. Sarah and her husband opened a tea salon, driven by a simple yet demanding vision: seasonal products, a strong local connection, and sincere pastries. Ten years later, Perlette has six establishments and a manufacturing site, all while staying true to its soul. At the helm of creations, Chef Jérôme Dijoux (who has been with them for a decade) has managed to charm both loyal customers and the most discerning palates. A consistency and creativity that finally caught the attention of "La Liste", the global reference in gastronomy.

A Toulouse pride, with feet firmly planted in the region
For Sarah, the emotion was immediate, as until now, Perlette had never sought to go beyond the borders of Toulouse. Local flour, nearby suppliers, shops recently established in Blagnac and Muret… the project has remained deeply rooted in Occitanie. But this entry into "La Liste" opens up new horizons. For customers, the success is no surprise: originality, quality, warm welcome, and a relaxed atmosphere… the recipe works. And seeing Perlette among the best pastry shops in the world?
