The Bouillon, a concept that's all the rage
At the helm of Bouillon Capitole are Hugo Monteils and Daniel Cabanel, determined to make the Capitole square more accessible. Their idea? A restaurant where everyone can indulge without breaking the bank. With them, the starter, main dish, dessert, and drink are all under 20€, a true luxury in 2025! And there's no compromise on quality: everything is designed to ensure the menu stays delicious, generous, and made with fresh ingredients!

A service from the past, in a historical setting
If you know a bit about bouillon, it’s really all about the atmosphere and the identity. The servers will be dressed in aprons, shirts, and ties, just like in the good old days! All this takes place in a decor that retains the charm of the Grand Café (thank goodness). To ensure top-notch service and meet the demand (they expect nearly 1000 covers a day), the team will consist of about forty people.
