Bouillon, a concept that’s taking off
At the helm of Bouillon Capitole, we find Hugo Monteils and Daniel Cabanel, eager to make the Capitole Square more accessible. Their idea? A restaurant where everyone can treat themselves without breaking the bank. With them, the starter, main course, dessert, and drink don’t exceed 20€, a true luxury in 2025! And there’s no compromising on quality: everything is designed to ensure the menu remains delicious, hearty, and made with fresh products!

A traditional service, in a historic setting
The bouillon, if you know a bit about it, is all about the atmosphere and identity. The servers will be in aprons, shirts, and ties, just like in the good old days! All this in a decor that maintains the charm of the Grand Café (thank goodness). To provide top-notch service and meet the demand (they're expecting nearly 1000 covers a day), the team will consist of about forty people.
