Say goodbye to cardboard plates and hello to cones! Since October 1st, La Knackerie has been serving up mini Alsatian snacks on the go. The idea came from Laure Flesch, a bold entrepreneur who turned a simple craving from Belgian tourists into a pretty cool culinary concept, let’s be honest! Located on Fossé des Tailleurs street, just a stone's throw from the cathedral, this little spot has already won over the entire neighborhood.

100% Alsatian, 100% Local

At La Knackerie, the sausages, crafted by a butcher from Reichstett, come in pork or poultry, in a delightful cocktail size of 12 grams. They are served in specially designed cones to keep the sauces separate. The original twist? Two Michelin-starred chefs, Alexis Albrecht and Joël Philipps, have dreamed up exclusive sauces: a tangy pesto and a Picon-horseradish.

Sauce, Salad, and... Pretzels!

With 20 sauces on the menu, including must-try signatures from Alélor and bold flavors like truffle mayonnaise or beer mustard, the hardest part will be making a choice. And to complete this street food experience, La Knackerie also offers ultra-local sides Crunchy salad, fresh bread, and pretzels baked on demand. On the drink side, you can find refreshing soft drinks and Alsace beers, like those from the Meteor brewery, completing the menu.

If the concept is already a hit in Strasbourg, Laure Flesch has plenty of ideas buzzing in her head. A second location in Colmar is in the works, and Alsatians from all around the world have even reached out to her to export her knacks to New York, Shanghai, and even Dubai.And after all, why not ?
