From Paris to Rennes, a Highly Anticipated Arrival
This Saturday morning, Place des Lices is buzzing with excitement. The last tables are being set up, teams are hustling around, and curious passersby peek through the large open door. At the helm of this new spot, Gary Lavail sports a big smile: “It’s amazing what you’ve created,” an enthusiastic passerby whispers to him.
And it’s no wonder! The space, located on the ground floor of Mama Shelter and empty for months, is finally coming to life. The buzz is already in the air, and a few posters announcing the arrival of Gruppomimo are enough to spark curiosity. It’s worth mentioning that the brand claims to be “the most followed restaurant on social media after McDonald's.”
A First in the West
After a series of openings in Paris and the surrounding area, founders Édouard Hausseguy and Benoît Bossu, along with their star chef Pietro Rabboni (French pasta champion), have chosen Rennes to launch their first address.e; the West.
Gary Lavail explains that he focused on building a young and dynamic team, recruited more for their character than their experience. The result: an Italian brigade, featuring a pizzaiolo straight from Naples and a chef trained in bistronomy.
Pasta in a Cheese Wheel (and Truffle)
If La Valentina is already a cult favorite in Paris, it promises to make mouths water in Rennes. Prepared right in a wheel of pecorino cheese with fresh truffle, this dish is a true culinary spectacle. The menu also includes a variety of pastas, pizzas, bruschettas, and of course, homemade desserts featuring pistachio provided by chef Pietro's father.
At lunchtime, a daily special will complement the offerings. As for drinks, the absence of a license IV means you'll need to order food to enjoy a cocktail.

A place designed for the atmosphere
Gruppomimo Rennes offers between 115 and 130 seats indoors, plus 40 to 50 spots on the terrace. The space has been completely reimagined: green marble tables, red banquettes, a tri-color floor reminiscent of the Italian flag, and an open kitchen featuring an oven covered in mirrored tiles like a disco ball. A “speakeasy” style bar will enhance the vibe, and the dough mixer is intentionally left in the dining area so that guests can witness the dough preparation.
Starting in September, home delivery via Uber will be available, and the terrace will evolve starting next year.
