Amsterdam : Ecomama Boutique Hostel
The eco-conscious dream hostel for all backpackers, but not too much. You have to book in advance - it's very popular - and it costs a little more than its counterparts (around 25 euros for a dormitory night). But it's awesome. The luxury of affordable accommodation. The double room with a bathroom has large windows with a view of the canal, giving the impression of sleeping on a houseboat. The decor is ultra stylish and sleek, the drinks are cheap, and the pub crawls are great. The added bonus: there's a tipi in the common area. Just like that!

Seville: Trotamundos
Trotamundos is the ultimate Andalusian hostel, with a magnificent central cloister. It is only a 10-minute walk from the Giralda Tower and the Cathedral. This place is super welcoming, very typical, and super affordable (from 14 to 20 euros per night in a dormitory). The best part: there is an amazing rooftop! The city of Seville is absolutely magical, so you should go there right away. So even if Trotamundos is fully booked, go there, even if you have to stay in a dump.

Gloucestershire: St Briavels Hostel
For a cool medieval British experience, go to St Briavels Hostel. It's a bit lost (but not too much) in the English countryside - like "The Hound of the Baskervilles" style - this youth hostel is located in a castle. Yes, you read it right, in an 800-year-old castle. You pass the moat, cross the courtyard, and find yourself in an ultra picturesque room, with stone walls. A big immersion into the Victorian period. Dormitories are at 24 euros, there are endless hiking trails around, and it's easy to negotiate for an English breakfast before starting the day.
