Since his arrival in 2008, he has successfully created a simple menu that highlights the flavors of the region with precision in every seasonal culinary creation. He has shared one of his favorite recipes with us, so open your ears wide and take notes!

Smoked mussels and Ostend shrimpsThis is a milk and Hoegaarden emulsion. For 6 people. Ingredients: 1 kg of mussels, 100 gray shrimp from Ostend (buy precooked or cook them beforehand), 1 carrot thinly sliced, 1 yellow carrot thinly sliced, 6 Brussels sprouts, 150g of baguette bread to make clarified butter croutons, 50g of food sawdust, 1 tray of purple shiso, salt and pepper, 300g of white celery, 1 large onion, 1 thinly sliced ​​beetroot, 1 tray of purslane, 1 bottle of Hoegaarden white beer, 10cl of beaten milk, 50g of butter. Preparation: Cook the mussels with the onion, celery, and beer. Then, shell the mussels and reserve the juice in another bowl. Smoke the mussels for 3 minutes with the food sawdust. Prepare the vegetables for garnish as shown in the video (carrot, Brussels sprouts, beetroot, herbs). Pass the thin slices of bread in the clarified butter to create clarified butter croutons. Pass the juice through a strainer, incorporate the milk, and emulsify with a hand blender. Enjoy!And beat the buttermilk and emulsify in the blender, then adjust the seasoning. Serve the plate as shown in the photo, pour the very hot juice, arrange the herbs and the bread to serve. Enjoy your meal! After a good night's sleep, there's nothing better than a good brunch to get yourself in shape. And it's at The Belgian Clan that it's happening. Located at the corner of Rue Sainte-Boniface and Rue de la Paix, you can enjoy the Brussels light through the large arched windows, just like New York. The atmosphere is full of good vibes, with a 1920s and prohibition theme guaranteed! For the more traditional among you, we recommend the Magret de Canard with Kriek Lindemans, potato croquettes, and vegetables, a true delight. But be careful, in Belgium, carafes of water don't exist. So don't make a mistake, order mineral water if you don't want to die of thirst!

It's time to immerse yourself in Belgian culture, and what better way to do that than by visiting the Magritte Museum? This museum showcases the works of the artist with the same name, who is known as the pioneer of surrealism in Belgium and abroad. With over 200 artworks, this exhibition is the largest in the world. The artist's multidisciplinary collection will take you on a journey into his absurdly surreal universe.
