Their bread is made by Frédéric Lalos, a Meilleur Ouvrier de France, no less, and their recipes are also elaborated by MOFs. The Aztèque, marinated farm chicken, Mornay béchamel, brézain (smoked cheese), red beans, spicy crushed avocado, grilled peppers, coriander, is to die for. The Mise au Vert, young asparagus, hummus of peas, sliced avocado, crunchy roasted dried fruits, spring onions, basil, mint, is incredibly fresh. Around them, the Viking, the Winnie, the Shaolin are equally delicious, as well as the Mam'z.She and Titi, reinvented versions of the classic croque-monsieur and madame.

Truffle alert over here! In the middle of the Saint-Quentin market, we discovered this new stand called Pardi les Halles. opened about a month ago. Jean Sébastien Trombino, the executive chef, offers us a truffle-filled croque-monsieur! Between two slices of homemade 8-grain bread (you can also find their delicious bread selection at their neighborhood bakery, Maison Dimanche), the flavors of the truffle-infused cauliflower mousse and "muscadet" butter and parmesan sauce, truffle-infused Parisian ham from Maison Seguin, and truffle-infused gouda cheese come together, all sprinkled with Italian white truffle oil and a truffle mushroom tartare. In short, a rather calorific croque-monsieur, but oh how we love it! Especially when the ingredients are so fresh!
The best part: The surprise upon seeing the gastronomic presentation of these beautiful plates, and the anise cakes that accompany the locally roasted Lomi coffee from Paris, made by the manager's grandmother!
