Claire Heitzler's Crêpe Cake

Pastry chef Claire Heitzler treats us to a fluffy delight for Candlemas. The traditional crêpes transform into a light and soft cake, featuring vanilla soufflé crêpes lightened with whipped egg whites, all drizzled with a chocolate and Piedmont hazelnut spread. The chef has even thought of those who love fruity flavors, preparing a version with citrus marmalade, made with fruit picked at peak ripeness by Agrumes Schaller.

Benoît Castel's Crêpe Suzette

Benoît Castel lights up Chandeleur with his (very cheeky) flaming box. A magical box that holds six golden crêpes drenched in a caramel orange sauce, with a touch of Grand Marnier and a sprinkle of candied citrus zest. In short, it's pure joy for all crêpe Suzette lovers. The little extra? In his cozy shop on Rue Sorbier, the chef invites you all week long to enjoy sweet crêpes, and on weekends for freshly made galettes!

The Millefeuille Crêpe from Mariage Frères
