You have a refined palate, but a tight budget? If you want to treat yourself to a fancy restaurant for practically nothing, try out the restaurants at hotel schools, where future professionals practice in real-life conditions.

There's no doubt about the quality of service and dishes, considering the team is made up of highly motivated students (remember, their work is judged with every service). Just remember to book in advance, a few months in advance actually, because a good deal attracts a lot of people (not sure if this saying is true, but you get the idea).

And to enjoy a bill that's half the normal price without sacrificing quality, make sure you don't miss out on these hidden gems., you will need to adapt to the students' schedules. This starts with being punctual when it comes to mealtime hours (there's only one per lunch/dinner), being able to adjust to the unpredictable opening days of some establishments, and persisting in making reservations with the front desk, which is not available 24/7.

Here, we train great chefs like restaurant managers. Among the teachers, there are several Best Craftsman of France, including Christophe Haton, MOF 2011, who recently joined the teaching staff. Quite impressive! The students have two application restaurants, Le Premier and Le 28, where gastronomic menus change daily. Just one small rule: the guests at the same table are invited to share their choices. Not a big sacrifice when you consider that lunch costs between 25 and 30 euros and dinner costs between 40 and 45 euros!

The restaurants l'Astérie and Côté jardin are both gastronomic, and the cuisine is provided by experienced students. For 20 euros at lunch for the first one, 15 for the second one, 27 and 22 at dinner, the taste is in the spotlight: chorizo cocotte egg, pea emulsion, steamed beef with sun-dried tomato puree, cabbage and morels, chocolate pastilla and roasted dates with passion fruit juice... If you prefer a cheap and quick lunch, head to the Orée or Aube brasseries. First-year students, for example, will offer you Parisian-style gnocchi, entrecôte with wine merchant sauce, raw sautéed potatoes and jubilant cherries for 15 and 18 euros respectively.

Here, two restaurants offering a lunch and dinner gastromy menu are open to the public. One, Le Sésame, offers an aperitif, glass of wine, appetizer, main course, dessert, and coffee for a price between 13 and 15 euros. The Paprika restaurant, on the other hand, is run by more experienced students. The menu is priced at 16-20 euros for lunch and 21-25 euros for dinner. A brasserie formula also allows dining à la carte, with options for 1 dish, 2 dishes, or a complete menu (Monday lunch and Tuesday lunch).

The Jean Drouant Hotel Trade School also offers two application restaurants, "Julien François" and "Atelier Bartholdi". The first one is a gastro restaurant in an art deco setting that offers a classic lunch menu (for 16 euros) or a gastronomic menu (for 19 euros), as well as a gastronomic dinner (for 22 euros). The brasserie "Atelier Bartholdi", on the other hand, is only open for lunch, with a duo formula (two dishes) for 15 euros and a trio for 19 euros. Plus, you'll have a choice of several appetizers, main courses, and desserts. Aspiring cooks, pastry chefs, and chocolatiers are busy every weekday lunchtime in the kitchens of the La Fontaine restaurant.. The traditional menu offers a starter, main course, cheese, and dessert. For the last mock exam, the menu consisted of a poultry terrine with porcini mushrooms, sautéed duck breast and an assortment of ancient vegetables with bordelaise sauce, as well as an apricot Chiboust tart for dessert. It's worth noting that a starter/main course or main course/dessert set menu with a drink and coffee is available on Mondays for 14.50 euros.
