In front of the impressive fireplace opened to the dining room, we find Jean-Yves, busy cooking his meats like nowhere else. Because if there are grilling places in Paris, the cooking is done with charcoal and not with firewood, as our host specifies. Le Bon Georges

If you always feel a bit guilty when you eat a steak, this is the place to go. Le Bon Georges works exclusively with French producers, including Polmard, who has the reputation of pampering their cows like no one else. Proof of that is their heifers are raised freely until the age of 4. Suckling pig, tartare, knife-cut carpaccio… every day, 4 dishes and 4 cuts of Polmard beef are offered. Attention, exceptional cuts are only available by reservation!

Flesh

At Flesh, there are good slow-cooked rumsteak from Metzger. The smell is almost enticing from here... So we went to test Flesh, the new temple of grilled meat just the way we like it: farmer's chicken thigh, leg of lamb... In short, classics that never disappoint. Alongside this good meat, there are vegetables, fries, corn on the cob. Everything is good in the barbec'.

Hugo Desnoyer's Table

Open in Halle Secrétan for less than a year, the star butcher's table offers exceptional meats selected according to his three house appellations: round, mild, and robust. On the menu, beef, veal, or lamb tartare, in large format or bite-sized, beef or veal cuts for grilling, veal quasi or lamb rack. With prices ranging from around ten euros for the tartare to over 200 euros for the beef rib for two, the restaurant is affordable for all budgets, but always with exceptional cuts. That's what's good.
