You come here for the open brunch - meaning à la carte - in the British style. Modern and sleek atmosphere to sit around a traditional welsh (with a touch of mustard). To be accompanied by pancakes, a typical chicken pie, or a kedgeree (haddock, rice, spices, and egg).

The restaurant with a 60s decor serves its welsh with homemade fries cooked in two baths, just like the Belgians (our neighbors also enjoy this dish)! For 4 people

In a saucepan, melt 400g of cheddar cheese, mix with 4 tablespoons of beer and 4 tablespoons of mustard. You will get a smooth paste. Season with salt and pepper.

Soak four slices of toasted bread in 25cl of beer. Put your slices in individual ramekins.

Place a slice of ham on top of each slice of bread, then generously coat each ramekin with the cheddar cream that will cover everything.

Bake in the oven for 10 minutes (180° Th 6), then crack an egg (or not) over everything before serving.

For 3 people

Prepare the béchamel sauce: melt 50g of salted butter over medium heat, add 50g of flour. Then add 50cl of cold milk. Mix everything until thickened and sprinkle with pepper and nutmeg.

Once the béchamel is thick, add 20cl of beer, continue stirring, add 20cl of cream and 175g of Maroilles cheese (without rind) while continuing to mix until the consistency is creamy.

Arrange 6 slices of white bread at the bottom of a deep plate, sprinkle with 3 slices of ham. Add the béchamel sauce (previously passed through a siphon if possible).

Grill for 3 minutes, then sprinkle each plate with grated cheddar and bacon before placing a poached egg on top.
