Just opened on April 1st, Calcifer sets the street Notre-Dame-de-Nazareth ablaze. This place, entirely dedicated to wood-fired cooking, offers an honest and precise cuisine where fire unveils the flavors. You’ve guessed it: each dish dances with the flame, all within a warm and theatrical decor to extend the experience. Looking for a little sneak peek of the menu? How about some chicharrón with sriracha, mackerel with sorrel, turbot with pil pil, cochinillo with salsa roja, and yellow chicken in satay sauce... And for a sweet treat, an orange curd donut that also takes a trip to the barbecue!

Echo Market
Unless you've been living under a rock, you probably know Echo, a.k.a. the spot serving one of the best brunches in Paris. From the amazing crispy rice bowl to the famous grilled cheese that everyone's talking about all over the city, not to mention all those comforting drinks… It’s the go-to place in Paris when you're craving a good combo of healthy and cheeky. The good news? They just announced the exciting arrival of a brand new Echo Market. And while we don’t have all the details just yet, we already know we’ll be there, fork in hand.

The Ecailler du Petit Chardon
Neighborhood bistros that we love, Le Chardon and the Petit Chardon are filled with comforting vibes. Simple banquettes, no-frills decor, and a warm atmosphere make it a cozy spot. Here, you can enjoy hearty dishes, with delightful plates, slow-cooked meals, meats covered in sauce, and homemade desserts. After two initial locations in the 10th arrondissement, the family is expanding (still in the same neighborhood) with a new seaside-themed location. This April, we can look forward to a chic bistro atmosphere resembling an oyster bar.

Salto Bar
On February 8th, Diego Alary – the most followed French chef on TikTok, who took part in the famous season 11 of Top Chef – announced some exciting news that got our stomachs rumbling: the opening of his very first restaurant in Paris. This spring, the chef will unveil Salto Bar, a tapas bar inspired by his roots, where he focuses on Iberian cuisine right in the heart of Ménilmontant. He will offer a product-driven cuisine that blends typical dishes with creative recipes, without holding back at all!

Pepins
Recently opened on Rue du Faubourg Poissonnière, Pepins shakes up our lunch break with deliciously crafted sandwiches. Behind the counter? Tanguy and Sully, two long-time friends who found a shared passion for sandwiches. From this came Pepins, offering us the chance to bite into fresh, made-to-order sandwiches with quality-sourced ingredients. On the menu: a crazy Panino with stracciatella, mortadella, and truffle olive oil; a Poule Pork with poached eggs and bacon; a classic Parigot jambon-beurre; and a daily sandwich that changes based on the freshest ingredients and the chefs’ cravings.

Faaï
After a soft opening on March 26th, Faaï continues to unveil this spring with characterful Thai cuisine. Here, the cooking over fire and embers is a must (is there a new trend happening in Paris?) with clay barbecues called tao-than. In short, here’s another address that’s going to set the city ablaze – by the way, faaï means fire in Thai – where you can enjoy authentic cuisine in the style of Bangkok.
