1. Daimant Saint-Honoré
After years of delighting us just steps away from the Canal Saint-Martin with decadent sandwiches and after opening a restaurant with thoughtfully crafted small plates on Rue du Faubourg Poissonnière, Paris's vegan queen Alice Tuyet has opened a new spot dressed all in red in the heart of Paris, on the lovely Place du Marché Saint-Honoré. On the menu: Breton seaweed caviar, grilled and caramelized zucchini with charcoal, roasted cauliflower with its secret sauce, lacquered mushroom skewers, and the must-try naughty croquettes… In short, classics from the house that always elevate vegetables and are making their way to a more bling-bling neighborhood (which we can’t wait to explore).

2. Prévelle
Amazing news! The very first address by the renowned chef Romain Meder is about to open! After years behind the scenes at Domaine de Primard, the chef is bringing his talents to Paris to offer a more personal cuisine that highlights vegetables while honoring raw ingredients and his connections with local producers. The name of the restaurant, Prévelle, is inspired by a place in his hometown of Neurey-lès-la-Demie in Franche-Comté, with the landscape beautifully represented in the restaurant's logo.

3. Irwin
Another renowned chef is getting ready to open his first Parisian table, I’m talking about Irwin Durand, who is setting up his pots and pans in the 8th on rue Cambacérès. What can you expect? A truly contemporary cuisine, deeply rooted in French tradition, showcasing both the local terroir and the producers. As for desserts, pastry chef Tessa Ponzo will be in charge, highlighting fermentation in her creations.

4. Fuga Monceau
After treating us to a bold menu with Italian-Japanese flavors by the Seine, Fuga is heading to new horizons and setting up just a stone's throw from Parc Monceau in the 8th. This fabulous Parisian spot will blend gastronomy and the art of living with five exceptional spaces. First up is the restaurant Laïa Monceau and its Mediterranean-Latin cuisine, a delicious extension of the successful eatery on Boulevard Voltaire (still by Fuga Family), along with a rooftop inspired by the Canary Islands featuring cocktails, food, live music, and above all, a breathtaking 360° view of the capital. Other spaces to explore include Fuga W, which will celebrate the art of wine; and Fuga Space, which will host conferences, shows, concerts, and exhibitions.
