Let's introduce Isaac Romero and Risa Ichimaru, the duo behind the scene who have crafted a refined menu of Japanese specialties and authentic recipes that celebrate the art of temaki handrolls. It's up to you to choose the one that will tantalize your taste buds! There's a first vegetarian recipe with cucumber, shiso, and paprika mayo, followed by two others featuring fish, such as salmon with crunchy tempura or negitoro (chopped raw tuna). Here, we eat standing up, just like the Tokyo fish market counters, and we absolutely love it! Kaïto, which can be translated as "the man of the sea", reveals its long blue marble counter where we come to lean and enjoy freshly prepared handrolls right in front of our eyes.
