Jeffrey Cagnes' Aumônières Crepes
For this new Candlemas, the pastry chef Jeffrey Cagnes is once again inviting us to discover his delightful aumnonières crepes. Gracefully folded and filled with ever more delicious flavors, they evoke the chef's childhood memories through three creations. First, we have the exotic one, scented with Madagascar vanilla, packed with a Neapolitan biscuit, a mango brunoise, and an exotic whipped ganache; next is the vanilla-blueberry featuring a vanilla cream, blueberry confit, and fresh blueberries; and finally, the chocolaty option, which combines a cocoa crepe, a Neapolitan biscuit, almond-hazelnut praline, a 64% cocoa Peruvian whipped ganache, and crushed roasted hazelnuts.

Claire Heitzler's Fluffy Crepe Cake
Pastry chef Claire Heitzler is treating us to a cloud of delight this Chandeleur. Traditional crepes transform into a light and wonderfully fluffy cake, made with vanilla crepes mixed with whipped egg whites and then baked like a soufflé. This year, the chef has crafted a new sweet and refreshing version, filling her cake with a generous chestnut cream and a citrus marmalade that's as fresh as it is tangy.
But no worries, for those who prefer (simpler) things, the iconic recipe for hazelnut spread is of course available.

The kawaii crepes from Comptoir Harajuku
Taka Ozaki Leblanc, a Japanese native and a Parisian by adoption for over 20 years, has brought a little piece of Tokyo right into the heart of Paris. Comptoir Harajuku, a kawaii-themed crêperie, invites you to discover crêpes made the Japanese way, rolled up and filled with cream. You can create your own crêpe and choose from a variety of fresh fruits, ice cream scoops, sauces, and toppings (not to forget the house-made whipped cream, of course!). You can also opt for one of the signature recipes on the menu, like the Dreamy Matcha or the Vanilla Crème Brûlée, a rolled crêpe inspired by the classic crème brûlée.

Thibaut Spiwack's Crepe Cake
Thibaut Spiwack, a Michelin-starred chef at the helm of Anona (a Top Chef alum), has teamed up with Brutus – one of the best creperies in Paris – and whipped up a citrus crepe cake for us. On the menu? A delightfully tangy lemon cream, orange whipped cream, all sprinkled with candied orange zest and meringue.
