No rest for the brave! Hardly has the Christmas and New Year's feasting come to an end, and we’re already diving into the aromas of almond and butter filling the house. Nina Métayer’s Galettes
With roots in La Rochelle and adventures in Mexico, Nina Métayer's galettes des rois, an extraordinary pastry chef who needs no introduction, are a true invitation to travel. The first pays homage to her hometown, La Rochelle, and takes the shape of a beautiful compass dusted with cocoa. The second represents the rose window of the newly inaugurated Notre-Dame Cathedral, featuring a frangipane with light notes of caramelized cinnamon. Lastly, the third awakens deep notes of...a quality rum, a hint of amber exoticism that transports us from the other side of the Atlantic.

The Galettes by Jeffrey Cagnes
Jeffrey Cagnes is going all out for Epiphany, treating us to not one, not two, not three, but four exceptional creations. First up is the hazelnut galette, featuring reverse puff pastry and hazelnut frangipane, along with a delightful praline, crushed hazelnuts, and caramelized almonds. It's a paradise for all nut lovers! Jeffrey Cagnes has also whipped up a more classic galette, with rum-flavored frangipane, and lastly, a galette in collaboration with the brand Cupra that blends the sweet aroma of...the almond and hazelnut with dark chocolate and brownie. Finally, the pastry chef also offers a version of the king cake in a babka style with pistachios, orange blossom, and candied orange.

The Almond and Black Sesame Marble Cake from GinkoSince 2022, at Ginko, chef Sayo Yamagata (a Californian with Japanese roots) and chef Othman El Ouraoui (of Franco-Moroccan descent) have been elevating traditional pastries by infusing the richness of their multicultural heritage. For Epiphany, these two ex-Bristol chefs have whipped up a classic galette featuring a generously buttery, crispy puff pastry, filled with a luscious frangipane cream enhanced with almond milk syrup and sprinkled with crushed almonds. And that’s not all! They’ve also created a more unique marbled galette, with a meltingly soft and slightly sweet frangipane that blends the sweetness of almonds with the deep roasted notes of black sesame. The fève, by the way, was designed by ceramist Angela LY, who crafted each one by hand in her workshop in the 17th arrondissement.

The Kings' Margherita from La FelicitàA Galette des Rois with an Italian twist, or almost... The pastry chef of La Felicità, Thomas Zachariou, has prepared a camouflaged galette that looks like a Margherita pizza for this new Epiphany. And not only does it look amazing, but its recipe is too! It features a generous frangipane with almond cream, topped with hazelnut praline and roasted hazelnuts, all wrapped in a crisp puff pastry, and finished with little clouds of white chocolate resembling mozzarella.
