No rest for the brave! Just as the Christmas and New Year leftovers are finished, we dive right into the aromas of almond and butter filling the house. And it couldn't make us happier, because the galette des rois is simply delicious. But to mix things up a bit, this year we suggest trying some more original creations among the most beautiful galettes in the capital. And don’t worry, there will still be a fève. Phew!

Jeffrey Cagnes' Galettes

Jeffrey Cagnes goes all out for Epiphany, bringing us not one, not two, not three, but four exceptional creations. First up is the hazelnut galette, featuring reverse puff pastry and hazelnut frangipane, along with a delightful praline, crushed hazelnuts, and caramelized almonds. It’s a paradise for all nut lovers! Jeffrey Cagnes has also prepared a more classic galette, with rum-flavored frangipane, but that’s not all—a galette in collaboration with the Cupra brand that blends sweet scents together!

The Almond and Black Sesame Marble Cake from Ginko

Since 2022, at Ginko, Chef Sayo Yamagata (a Californian with Japanese roots) and Chef Othman El Ouraoui (French-Moroccan) have been elevating traditional pastries by infusing the richness of their multicultural heritage. For Epiphany, these two former Bristol chefs have prepared a classic galette with generously buttery, crispy puff pastry, filled with creamy frangipane enhanced by almond milk syrup and sprinkled with crushed almonds. They also offer a more original marbled galette, featuring a melting, lightly sweet frangipane that blends the sweetness of almonds with the intense, roasted notes of black sesame. The fève was designed by ceramist Angela LY, who handcrafted each piece in her workshop in the 17th arrondissement.

The Iced Queen from Fruttini

Attention all those who aren't big fans of frangipane! Fruttini, the High Ice Cream shop in Paris, has reinvented the galette des rois in an ice cream version, and they've crafted a delightful Iced Queen for you. It's a wonderful blend of sweetness and crunch featuring a almond ice cream and layers of nougatine. And because we can't forget tradition, this icy galette hides a delicious edible almond fève inside, making one of you the queen or king of the evening!

The Kings’ Margherita from La Felicità

A king cake with an Italian twist, or almost... The pastry chef at La Felicità, Thomas Zachariou, has crafted a deceptive cake that looks like a Margherita pizza for this new Epiphany. And if it looks impressive, its recipe is just as delightful, featuring a generous almond cream frangipane, topped with hazelnut praline and roasted hazelnuts, all cloaked in a crispy puff pastry and adorned with little clouds of white chocolate resembling mozzarella. La Galette des Rois de La Réserve

Pastry chef Jordan Talbot will also have his say for Epiphany with his own creation designed for La Réserve. What's on the menu? Frangipane, of course, delicately flavored with orange blossom and vanilla from Mexico, topped with a flaky pastry scattered with caramelized Valencia almonds and crispy gavottes. And inside? A porcelain fève signed by Jacques Pergay, handmade in the workshop of the family factory in Limoges, all taking the shape of the iconic door of La Réserve. The Tasty Duo of Alléno x Rivoire

Chefs Yannick Alléno and Aurélien Rivoire present two new creations designed like a diptych, bringing together pastry and chocolate. On one side, we have a Galette des Reines with chocolate almond cream and orange compote, sprinkled with a crispy corn topping. On the other, a Tablette des Rois filled with soft chocolate cream and a orange compote as well. Double the delight!
