Gasolio

Barely has Red Sauce, the Italian-American counter that drove all of Paris wild with its legendary Spaghetti Assassina, blown out its first candle before coming back with a brand new location. From the start of the school year, say hello to Gasolio, a counter opening onto the Petites Écuries courtyard, inspired by vintage American gas stations. On the menu: chic, generous and ultra-comforting street food, with meatball sliders, refreshing slushees and even a Boston-style pizza bar. In short, a new spot that's bound to become the next headquarters for lovers of Italy, American style.

Kintsugi Beer

It's on the Quai de Valmy, along the Canal Saint-Martin, that Jonathan and Jefferson decided to set up shop and open Kintsugi Beer, a true brewpub where you can taste delicious beers brewed right on the premises! Casel Brewery

Starting in September, this exciting new spot is set to make waves in central Paris. I'm talking about Brasserie Casel, which will open its doors on Avenue Victoria, just a stone's throw from Châtelet. Behind the restaurant? The fine foodies of La Nouvelle Garde once again, already behind the hugely popular Brasserie Bellanger, Brasserie Martin, Brasserie des Prés, and Brasserie Dubillot. Staying true to their winning formula, the group will serve up 100% homemade cuisine in a true French brasserie spirit with theatrical décor. But this time, a brand new specialty is joining the menu: aged meat.

Les Bourgeons

Les Bourgeons is putting down roots in the 17th district! With this brand new location, young Pierre Chauvel, barely 25 years old, is taking on quite the challenge: telling the story of Île-de-France on a plate. Son of a well-known chef in the industry, he grew up with his hands in the kitchen, and also among the glasses, since he has a perfect command of wine pairings based on the products worked with by chef Orlane. At Les Bourgeons, it's all about Île-de-France terroir, with cuisine that celebrates local, seasonal products sourced locally. A new restaurant that's determined to prove you don't need to travel across France to find great food… Sometimes, the best things grow right next to Paris.

Pénates

After serving as executive chef of the Fuga group, Stéphane Moquet opens a new chapter with her first restaurant, Pénates. Designed as a true leafy haven on Boulevard Voltaire, the place comes alive from morning to night, between garden, light-filled veranda and cozy dining room extended by an open kitchen. On the plate, the chef imagines cuisine inspired by Mediterranean shores, with delicate Japanese twists. The guiding principle? Flame cooking and smoking techniques that bring depth and character to every ingredient.

Bouillon sur Seine

For the past few months, Île Seguin, which is home to Seine Musicale, has been undergoing a massive transformation. On the agenda, the creation of a cultural center spanning over 5,000 m², the opening of a huge park, and most importantly, the opening of the new Bouillon sur Seine. What's planned: a dining space of no less than 1,100 m², a magnificent terrace overlooking the Seine, for a total of 570 seats (including around a hundred outside). A truly vast gathering space, then, ready to welcome both small groups and large dinner parties in a unique setting thanks to its enormous glass bay windows facing the river.

Nonno San

Italy with a Japanese twist is settling into the 6th arrondissement. But here, we're not talking about fusion at all costs. Imagined by chefs Victoria Luciano and Keita Sukeno, Nonno San's cuisine draws from great Italian traditions while passing them through the precise and demanding lens of Japanese gastronomy. Each plate thus plays its own tune: either the faithful expression of a great Italian classic, or a dish of itameshi, this cuisine born from the meeting of Italy and Japan, which the Japanese have adopted, reinterpreted, and evolved over time.

Doobie's

Born in 1938, Doobie's is one of those legendary places that never age: they journey through the decades, gather memories and continue to come alive at night. Carrot

A little slice of London is about to arrive on rue du Dragon. Imagined by Franco-British Amelia Duverger, this new Saint-Germain-des-Prés tea salon promises a true Londoner's escape right in the heart of Paris. On the décor side, you'll find yourself immersed in the vibe of Portobello Road cafés in Notting Hill, blending British spirit with English living. On the menu: English Breakfast, generously served scones with clotted cream, carrot cake (naturally!), comforting London Fog, and proper tea time traditions. And on weekends, treat yourself to the "Carrot Roast," a playful nod to the traditional British Sunday Roast.
