1. Hanabi: a Japanese bar restaurant in the heart of a Parisian palace

It's Hôtel Hana, just opened at the end of 2023, that is about to unveil its restaurant straight from Japan. From the open kitchen, beautiful and delicious dishes will be served, according to the reputation of the two chefs, Shirley Garrier and Mathieu Zouhairi, the duo behind The Social Food. Between the white sesame mayo eggs and the vegetarian chirashi, we're already way too hungry.

2. Qasti Green: the new vegetarian Lebanese restaurant

After Bistrot, Shawarma, and Pâtisserie, here comes Green, the new addition to the Qasti family, managed by Chef Alan Geaam. You will find all the essentials of Lebanese cuisine transformed into plant-based delights. Vegetables, cheeses, and a variety of spices become the stars of this hilariously located establishment on Jeûneurs street. Join us in a few weeks to taste the celery shawarma.

3. Kiss: sunny street food from California

One-way ticket to California thanks to chef Matthias Gloppe, who had already taken us on a journey to Los Angeles with his other establishment, Echo. On the menu, a selection of sandwiches currently only available in LA. Sourdough bread, salami, all kinds of pickles, cheddar cheese, you'll find all the must-haves of American street food. And you can even find breakfast sandwiches, to start your day off right before heading to work in the morning.

4. Minore: the Japanese cocktail bar

Japanese chef Katsuaki Okiyama partners with mixologist Hugo Combe to delight us in every possible way. With 22 table seats and 12 bar seats, this new place is bound to quickly become a favorite spot for lovers of Japanese cuisine. The two partners will treat us to original food and cocktail pairings that will take us on a journey.

5. Public House : the new 5-star English brewery in Paris

« The Pie King », also known as Calum Franklin, arrives in the capital with his suitcase full of the best of his British specialties. As his nickname suggests, he plans to delight us with his finest pies, enhanced by French products, and whose recipes vary endlessly according to the seasons and the chef's desires. All in a warm and typical English pub atmosphere, full of leather and tartan. Nice.

6. Jay's Pizza: the most American of pizzas arrives in Paris

Two lovers of Italo-New York cuisine come together here to offer us authentic pizzas from the Big Apple, which would make our famous Joey Tribbiani jealous. 4 recipes (including the traditional cheese and pepperoni) are enjoyed in huge slices, in a very 90's atmosphere that takes us directly to the United States. The ideal place if you have a passion for the Teenage Mutant Ninja Turtles, for example.

7. Mojju: the Korean bistronomic table

Discovered 10 years ago in Top Chef (and it doesn't make us any younger), Thibault Sombardier is opening his new restaurant where he combines his passion for Korean cuisine and his slight obsession with bistros. For now, the project remains very mysterious as we don't know much, neither about the menu nor about the restaurant's decor, except that it will be designed by the decorators of the Nouvelle Garde. That already sounds like something nice.

8. Halo : the secret restaurant hidden in a concept store

Victor Blanchet, another former contestant of Top Chef, is about to take the reins of Halo, a hidden restaurant at the back of a fashion and design concept store. He will offer cuisine with Basque and Mediterranean influences, which will change according to the events and artisans welcomed in the store. A hybrid place that intrigues us as much with its amazing concept as with the mystery that still surrounds it.
