This Top Chef winner claims the title of Île-de-France egg mayo champion!

A signature dish of Parisian bistros, egg mayonnaise embodies the simple elegance of French cuisine. And for the very first time, the egg mayonnaise preservation association decided to give it even more recognition by organizing the Île-de-France egg mayonnaise championship. And this inaugural edition was won hands down by a chef well known to Top Chef fans…

Among the family of great bistro classics, I present: beef tartare, leek vinaigrette, French onion soup, and of course the unmissable egg mayo. A true monument of French culture, this appetizer with its deceptive simplicity is serious business; so much so that this year, it earned its own regional Île-de-France championship. And after fierce competition within the halls of Arsenal Biltoki in Rueil-Malmaison, it was season 14 Top Chef winner Hugo Riboulet who took home the prize!


First try, resounding success!

op-chef-2027/">France's best cooking show, you surely remember Hugo Riboulet, the young culinary prodigy coached by Philippe Etchebest, who won season 14 in 2023. Well, you'll be delighted to learn that he's just claimed a new trophy, that of Île-de-France Champion of Egg Mayo. He triumphed over 16 other chefs following a tasting that we can only imagine was absolutely grueling for the judges.

And we have to say that his recipe is absolutely mouthwatering: kohlrabi remoulade, verjuice jelly, puffed spelt, candied egg yolk, and mayonnaise made "with two special mustards" and vinegar. A creation that the young chef wanted to test before putting it on the menu of his new brasserie, which should open in early 2027. Clearly, the recipe is more than validated, and it makes us even more eager to try it.


A long road ahead

But be careful, no question of resting on his laurels for Hugo Riboulet, since this regional competition was actually only

g>only a qualification for the world egg mayo championships. A grand final will take place on November 23rd, to determine the French representatives, and we're rooting for the former blue ribbon candidate. But also for Célestin Piotrowski, from Chez Colette in Suresnes (Hauts-de-Seine) and Léo Bouquin, chef of the bistro Chez Léo (1st), who both qualified for the final by winning the silver and bronze medals for the Île-de-France region !
