The quest for excellence continues in the capital and its surroundings. The latest gem? La boulangerie Lorette, located on rue de la Butte aux Cailles in the 13th arrondissement. It has just won the Trophy for the Best Pastry Shop of Greater Paris 2026, awarded by the Syndicate of Bakers of Greater Paris. A prestigious title for a pastry chef who is just 25 years old… 


A lemon tart and a chocolate éclair that make a difference

His name? Philippe Arsac. The young pastry chef has just won the Trophy for the best pastry in Greater Paris, against 74 other candidates. What made the difference? His lemon-bergamot meringue tart and his chocolate éclair. In the first, « we kept a sweet pastry base with a layer of almond cream that's just thin enough to add a bit of roundness. Then there’s a thick layer of lemon confit for a burst of zest and acidity. Finally, we finish with our lemon bergamot cream, which is very creamy », he explains to the Parisian newspaper.Parisian. The second one is a clever mix of a crunchy biscuit, a  Jivara creamy , and a caramel-based fondant, finished off with cream.
