A lemon tart and a chocolate éclair that make a difference
His name? Philippe Arsac. The young pastry chef has just won the Trophy for the best pastry in Greater Paris, against 74 other candidates. What made the difference? His lemon-bergamot meringue tart and his chocolate éclair. In the first, « we kept a sweet pastry base with a layer of almond cream that's just thin enough to add a bit of roundness. Then there’s a thick layer of lemon confit for a burst of zest and acidity. Finally, we finish with our lemon bergamot cream, which is very creamy », he explains to the Parisian newspaper.
