Every year, in spring, the famous red guide reveals its star selection awarded to the best establishments in the world. But that's not all! Every month, new restaurants are added to the France selection and showcased on the Guide website. At the end of January, 30 new dining spots have joined the list, including 12 Parisian restaurants.
12 new Parisian restaurants among the best in France
Let’s just say that if there are any beings we can trust on this Earth, it's the inspectors from the Michelin Guide. And this month, we can proudly say they've put the French capital in the spotlight since 12 of the 30 new entries in the Michelin Guide France for January are in Paris.
Among them, we have the restaurant Capsule, a retro-chic bistro in the 14th that we adore for its impeccably presented dishes, perfect seasonings, and delightfully elegant decor. The Guide even describes it as a place with « style » thanks to its «divine roasted chicken jus » and its « floating island that will blow you away ». Another spot to add to your Mapstr : Ken Yamamoto, a gourmet Art Deco restaurant that elevates « foie gras, pollock and Beef fillets with hints of miso, yuzu, and tempura ».

Among the other selected addresses, there are five establishments located in Auvergne-Rhône-Alpes, three in Bourgogne-Franche-Comté, two in Grand Est and Nouvelle-Aquitaine, and one in Hauts-de-France, Normandy, and Occitanie. ```Pays de la Loire and, finally, in Provence-Alpes-Côte d’Azur.
