The Editor

Raclette is THE must-have dish of winter. Its melty cheese, steamed potatoes, and delicious charcuterie make us drool just thinking about it. But let's be honest, it can often be the same old thing, and sometimes it lacks a bit of originality. To tackle this, some don’t hesitate to add their own little twist. Broccoli, pumpkin, caramelized onions... Some even get even more adventurous, like this restaurant in Morlaix, Brittany, which decided to jazz up its raclette by adding seafood...

Sensitive souls, beware

We know it, in France, our regions are proud – sometimes too proud – of their culinary specialties. A touch of chauvinism that some are ready to put aside to create slightly surprising alliances.

surprising. This is the case for this place located in the Finistère, which has decided to reclaim all the fundamentals of raclette, offering its customers a truly unique experience.

Raclette purists, we must warn you, the rest of this article might give you a few chills and even a virtual indigestion if you take things too much to heart. Because in this ephemeral restaurant imagined by Le Grand Café de la Terrasse, in Morlaix, you have two options: thesea raclette and oyster-raclette, creative pairings that showcase Breton products.

A raclette in the Breton style

This unique project is the result of a collaboration between chef Caroline Lambel and local producers, an oyster farmer, and a cheesemaker. Together, they invite you to melt Breton cheeses to replace the traditional tomme de Savoie, to drizzle over all kinds of smoked fish from local and seasonal fishing. You can also choose the option to gratin oysters directly in the pot, with the cheese.

If we believe the chef behind this initiative, « it’s working great!»! And honestly, it would have surprised us if she said otherwise. But to be honest, we admit that we remain quite skeptical, and we find comfort in the fact that luckily, this pop-up Chalet also offers some much more classic recipes: croziflette, roasted Mont d’or, fondue, in short, only sure values.
