Great back-to-school news: in September, la Nouvelle Garde is opening Brasserie Casel, its 10th location. Nestled just a stone's throw from Châtelet, this new brassery is banking on theatrical décor and an unexpected specialty: aged meat.

Yes, back to school means the end of vacation, but more importantly, it means new things! And lucky for us, Paris is about to be flooded with new hotspots. Starting in September, this exciting new venue is set to make waves in the heart of the city. I'm talking about Brasserie Casel, opening its doors on Avenue Victoria, just steps away from Châtelet. Behind the restaurant? The fine palates of La Nouvelle Garde once again, already behind the much-loved Brasserie Bellanger, Brasserie Martin, Brasserie des Prés, and Brasserie Cubilot. Staying true to their winning formula, the group will serve up 100% homemade cuisine in a true French bistro spirit. But this time, a major novelty is making its way onto the menu.


A brasserie that steals the show

You can't talk about Brasserie Casel without mentioning its décor. Located just a few meters from the Châtelet Theatre, it pays tribute to the world of entertainment with an elegant and hushed atmosphere. From the moment you walk in, the grand burgundy velvet curtains set the tone, while the Versailles parquet flooring, olive-colored padded armchairs, and posters inspired by great Parisian evenings transport visitors into an atmosphere worthy of the capital's most beautiful theaters. A warm and refined setting, designed as a true stage where you come as much for the food as for the experience.


Aged meat, the group's big new thing

On the culinary side, La Nouvelle Garde stays true to its DNA with the great classics of French brasserie cooking prepared in-house. But Brasserie Casel marks a turning point: for the first time, the group is putting aged meat front and center. This process allows for the development of deeper flavors, a more tender texture, and a particularly rich taste.

To showcase this expertise, the establishment will feature an impressive fully-glazed aging cellar in the basement, visible to customers. A knowing nod to the neighborhood's history, long defined by the meat trade. In short, blending tradition, heritage, and culinary pleasure, this new spot is already shaping up to be one of the most highly anticipated dining destinations of the Parisian fall season.
