In Toulouse, chef Michel Sarran has been affected. Just a week before the deliberation, his restaurant was stripped of its second star. Ouch.
Michel Sarran is not the only one to have lost one of these famous stars: the Parisian restaurant of Guy Savoy and Christophe Coutanceau's address in La Rochelle have suffered the same fate. For the Toulouse chef, this news brought a few tears. He even confides in the Parisien: "It's a blow, but we're not knocked out. We'll keep going and continue to give our best."Sincerely, it hurts. It's a blow. The ego takes a hit. I've had these two stars for 20 years. But we have to accept it. It's an uppercut, but we're not knocked out.
Michel Sarran took advantage to discuss the faulty method of the Michelin Guide to announce this news. “I would like to say that it's the first time it's announced a week before the guide's publication. I don't find that very respectful for my team, nor for the customers who have already made reservations. It feels like we're being labeled as the bad students of the year...”
The pill is hard to swallow, but the chef in the famous black apron doesn't give up. “I don't work for Michelin but for the people who come every day. ” All that's left is to come and taste his cuisine!
