Indeed, he is the king of ephemeral projects. After delighting us with his friendship broth, his summer guinguette, and his Benedicta bistro, Jean Covillault, one of the most endearing contestants from Top Chef across all seasons, is back with a new concept that’s good for our tummies, and especially good for the planet. At Des Restes, he offers us a thoughtful cuisine aimed at learning to give value back to ignored ingredients, in partnership with Nous Anti-Gaspi.
“What are we eating tonight?”
Leftovers often come with a not-so-glamorous reputation. We all remember those Sunday night meals as kids, where we had to settle for 3 sad pieces of stale bread with a soup made up of all the rotten vegetables.from the fridge, while we were just dreaming of pasta. Still, it feels a bit unfair because these dishes can also be delicious. For instance, isn't it said that a bourguignon is always better reheated ?

So, when we found out that our favoriteJean Covillault was opening a pop-up restaurant to highlight those often overlooked ingredients and recipes, we were absolutely thrilled! The plan? A 100% ethical and eco-friendly menu created from pantry staples and forgotten fridge items, available until March 2025, all for a charming price of 22€ per person!
