Back in February 2023, we mentioned it: Chakaiseki Akiyoshi, the world's first cha-kaiseki restaurant (outside of Japan) located in the 15th arrondissement, has just received its first Michelin star during the famous red guide's ceremony on Monday, March 16th. The restaurant is one of the 12 Parisian tables that received this honor. 3 tables also received a 2nd star (awarded to 8 French restaurants in total), while Le Gabriel, at La Réserve Hotel (8th arrondissement) achieved the ultimate honor of 3 stars. At Chakaiseki Akiyoshi, Chef Yuichiro Akiyoshi - who has worked in a triple-starred establishment in Japan and is a master in the art of tea, which he studied for nearly twenty years - and his team have created a refined menu in line with Japanese aesthetics, both minimalist and modern, all served on absolutely beautiful traditional tableware. The meal, organized in several courses, begins at 7pm with Kumidashi, a bowl of hot water that purifies the spirit.
