The twice-starred chef and Best Craftsman of France, Philippe Etchebest, is landing in the capital with Signature, an exclusive pop-up bursting with gourmet delights that showcases his signature dish: the ravioli. From October 9 to 31, you can find the chef's dishes on Rue Sedaine in the 11th arrondissement, served in a generous and ultra-friendly format.

Following his three exceptional locations in Bordeaux, Maison Nouvelle, his twice-starred gastronomic house, Quatrième Mur, his more accessible bistronomic brasserie, and La Table d’Hôtes, also a starred gastronomic table, Philippe Etchebest has set himself a mission: to offer a more street-food style.

And after a big success in Bordeaux, Etchebest is taking his ravioli counter concept to Paris with the pop-up Signature. But that's not all! Throughout the opening period in October, the chef is also partnering with UberEats to offer a special deal for €19.90 (which includes a savory ravioli, a sweet ravioli, and a small soup on the side).

Crazy for Ravioli
Signature is a unique culinary experience that combines French expertise with (not-so-guilty) pleasures in a street food style. And what does it look like on the plate? The menu offers a selection of savory ravioli, including “The Foie Gras”, the chef’s signature dish since 1996, now prepared with mushrooms, pan-seared foie gras, and creamy mushrooms; “The Vegetarian”, featuring a snacky eryngii mushroom instead of foie gras; and “The Truffle”, with truffle ham and truffle-infused creamy mushrooms.
On the sweet side, Philippe Etchebest has whipped up desser-style ravioli recipes, including “The Lemon Meringue”, a true bestseller with a refreshing, zesty, and creamy vibe, and “The Cannelé”, a delightful nod to Bordeaux's culinary heritage and the chef's beloved city. So, are you ready?
