As the new Michelin-starred restaurants have just been revealed by the Michelin Guide 2025, Ipsos has looked into the relationship that the French have with national gastronomy. Far from being in decline, the study published on March 31, 2025, reveals that 92% of the French have a positive opinion of French cuisine and that 71% eat traditional dishes at least once a week. The polling company also reveals which French dishes most represent the country around the world. Clearly, the southwest is the region that has the most visibility on a global scale from a gastronomic perspective.

The 10 Dishes that Best Represent France
The south-west, the Lyon region, Brittany, followed by Alsace and Burgundy… Here are the regions often mentioned as the most gastronomic in France. The study went further by focusing on the most renowned dishes. It is undoubtedly beef bourguignon that best represents France worldwide. It is followed by cassoulet and veal blanquette which complete the top 3. Duck confit, choucroute garnie, crepes and galettes, raclette, pot-au-feu, Burgundy snails, and bouillabaisse all make it into the top 10. Finally, there’s coq au vin, quiche Lorraine, dauphinois gratin, Savoyard fondue, tartiflette, and mussels marinières, ratatouille,...e, onion soup, Flemish carbonade, Niçoise salad, and steak tartare complete the list highlighted by the Ipsos study.
