All year round, Parisian food journalists roam the streets of the capital in search of new gems ready to tantalize your taste buds. This Tuesday, April 21, 2026 was the occasion for the Time Out team to reward the best of the best in the food scene in Paris. The event featured 14 awards, including the best lunch break, the best pizza, the best snack, the best restaurant, the best cocktail bar, and one that caught our attention, the best apéro. So, who took home the gold medal?


The Queer Saloon of the Marais

On stage, in the heart of the Parc des Princes, Marine Gora received her award, accompanied by her team in cowboy boots. And rightly so, after years of working at the café-canteen Gramme 3 located on Rue des Archives, the chef has reinvented herself...

Acute; cowgirl to open within the same walls as Coyote, the new queer lounge in the Marais. Coffee shop by day and wine bar by night, this place opened last autumn and dons its most beautiful minimalist western decor, featuring swinging doors, fringed lampshades, a few horseshoes here and there, and a playlist that swings between pop, indie rock, and country. Marine Gora confesses to Le Monde that she drew inspiration from the Montreal dive bar Spaghetti Western, which she discovered last summer, reclaiming the masculine codes of the country bar to create a lesbian hangout and a safe place for LGBTQIA+ folks in the heart of Paris.

The Art of Apéro Coyote Style

In this mini kitchen, the team operates like a coffee shop during the day, where queers (and allies) from Paris come to sip on American-style milkshakes, a “cow-girl grog,” or a refreshing Iced Coyotea. Leaning against the bar, we also treat ourselves to a little snack session with soft-boiled eggs, homemade granola, Cowboy sausage rolls, and chocolate sea salt cookies. Once the sun sets, the candles are lit to transform it into a neighborhood bar that focuses on quality in both the plate and the glass. 

The chef here embraces a varied cuisine with influences from Tex-Mex and even Vietnamese, featuring small shareable plates that are eagerly enjoyed with forks. On the menu? A snacking plate filled with gildas, cheeses, or fresh veggies, a kumquat crudo with amberjack, and pork ribs slathered in a homemade buffalo sauce meant to be enjoyed with your fingers. Our absolute favorite? Without a doubt, the dessert – the peanut millionaire shortbread lovingly named Helena Peabody’s Dream Cake, a sweet nod to our favorite diva from The L Word.

As for drinks – because after all, this is where you can have the best aperitif in Paris according to Time Outwe pair our dinner with natural wines, of course, mostly sourced from independent female winemakers.
