It’s a ranking we look forward to every month like the Messiah. A unique selection, led by a panel of experts, highlighting the cream of the crop of gastronomy, the best places from all over France.
At the end of May, a brand new list has just been published by the famous Michelin Guide, showcasing 15 new establishments recognized as worthy of splurging a minimum wage for an exceptional dinner – or not, because some offer quite affordable prices given the quality of the meal. And this is fantastic news because out of the 15 restaurants presented, 4 are located in Île-de-France, including 2 in Paris.
2 new Parisian spots among the best in France…
If there are indeed people on this earth who are rather fond of...For restaurant recommendations, it’s the inspectors of the Michelin Guide. This month, Île-de-France is in the limelight as nearly a quarter of the addresses listed in the guide are located there. While their prestigious palates often fall for exotic flavors, this time it’s the local producers, modern French cuisine, and quirky establishments that have been rewarded for their efforts.
Right in Paris, it’s primarily La Borie (15th arrondissement) that has been honored by the Guide. The manager, Tanguy Hanoun, sources directly from his farm in Haute-Loire for fruits, vegetables, herbs, eggs, lamb, as well as honey, butter, and snails. Fresh products, cooked with love, seasoned with precision, which the inspectors wanted to highlight for their ultra-short supply chain. bsp;
And it's higher up, in Alsace, that you'll find Elsass (10th), where the sounds might have given us a hint. Here, everything revolves around the Alsatian wines, which take center stage on the menu, paired with modern cuisine that highlights them beautifully. The choucroute is reimagined with finesse, served as crispy cromesquis or alongside a homemade boudin blanc and confit belly. A stroke of genius by Guillaume Keusch, a former lawyer turned restaurateur.

… and 2 gems in the Paris region
Continuing with the new spots, we have the calm and bright Café César, located in Clichy (92). This charming little bistro – with its red bricks and tiled counter – is perfect for a coffee, lunch, or dinner, always serving a consistent, precise, and carefully crafted cuisine. The inspectors' favorite: the sauces, essential to the dishes, especially the fish roe sauce that pairs beautifully with the delicious scallops, a true signature of this place.
Finally, for a dive into a uniquely atypical establishment, we head to Sainte-Geneviève-des-Bois (91), where Le Plongeon d'en face has made quite a splash. Its story is truly remarkable: in this former municipal swimming pool from the '70s, you'll now find a collaborative hive where Enzo Scaramuzzino, former right-hand man of Mathieu Pacaud, reinterprets great classic dishes every day with a touch of creativity.

French accents (farmer's pork square) and Italian (truffle risotto, pineapple carpaccio) blend together, creating a melody that has captivated the Michelin Guide unanimously.Among the other selected addresses, you'll find three establishments located in Auvergne-Rhône-Alpes, two in Nouvelle-Aquitaine and in Hauts-de-France, one in Grand-Est, in Brittany, in Occitanie, and in Provence-Alpes-Côte d’Azur.
