Good ramen flowing down the throat, comforting broth, toppings aplenty, a bit of spice to taste, that's the recipe for happiness. But in these temperatures hotter than the IQ of some of my neighbors, it's not easy to stuff oneself with super hot broth. Now, I don't know about you, but I am absolutely not ready to give up one of the best dishes in the world every time the thermometer goes crazy (and unfortunately, that's likely to happen often, if you ask me). Anyway, the solution exists, miracle, and it's called chilled ramen. It's the new food trend spreading across the capital and it's absolutely delicious. What a time to be alive.

The recipe for this icy gem with the Japanese name of hiyashi? Ramen noodles, a cold sauce and/or ice cubes, oil and no broth but always with toppings that awaken the taste buds and stomach. Super simple to make, very refreshing and doesn't require too many ingredients, here's a recipe for anyone who feels like putting on an apron... For the rest, you can also find them at Mori Café (11th arrondissement), at Gaijin Ramen Lab (Bagnolet or for delivery) or at Sanjo (1st arrondissement Paris).
