Ingredients
For 4 people :
1 whole chicken
5 cloves of garlic
15 g of fresh ginger
5 cl of soy sauce
2-3 lime
55 g of palm sugar
7.5 cl of oil
1 teaspoon of chili powder
4 teaspoons of ground coriander
30 g of fresh coriander
5 cl of coconut milk
2.5 cl of fish sauce
Preparation
Step 1 :
You'll see, it's a really, really easy recipe. The first step is simply to put all the ingredients EXCEPT THE CHICKEN into the blender and let the magic happen. There you go, your marinade is ready.
Step 2 :
In a container, blend the ingredients...Place the chicken, and let it rest for 24 hours in the fridge, making sure to turn the chicken occasionally, baste it, etc., so that all the pieces are well soaked.

Step 3:
After a good night's sleep, place the chicken in a dish with half of the marinade, and pop it in the oven for 30 minutes at 205°C, basting it once or twice during cooking. After half an hour, add the rest of the marinade, and continue for another 25-30 minutes.
Step 4:
When the chicken is nicely golden, turn off the oven, crack the door open, and let it rest for about fifteen minutes. This is super good for the meat, and great for your heating consumption in the middle of winter.
Step 5:
Finally, place the chicken in a dish, put the cooking juices in a gravy boat, and then enjoy all of it with your choice of side dish.
Bon appétit!
