Put on your apron and get your cutting board ready: here's a recipe for marinated chicken fajitas that you won't forget! The vegetarian version is also doable, just follow the recipe without the chicken.

 
Simple and effective

This recipe doesn't require great cooking skills. You just need a little time, a lot of love, and a hungry belly. With a fajitas recipe like this one, don't be surprised if all your friends ask for more and more! Enough chit-chat, let's get down to business. Get your aprons ready!

 
The ingredients you'll need (6 people)

12 tortillas
3 bell peppers (one red, one green, and one yellow, it's more fun!)
2 onions
1kg of chicken fillets.
1/2 lemon
25cl of sour cream
3 tomatoes
Guacamole
Green salad
Olive oil
Cayenne pepper and/or Mexican spice mix
Salt
Pepper
Grated cheese
And a lot of love...

For the chicken marinade:

1 lime
1 chopped onion
2 garlic cloves
Mild chili
1 tablespoon of oregano
1 tablespoon of coriander

The necessary utensils

A knife
A cutting board
A frying pan

Step 1

To prepare the chicken marinade, mix the ingredients together, namely lemon juice, minced garlic and onion, a bit of sweet pepper, oregano, and coriander. Cut the chicken into cubes and add it to the mixture. Let it rest in the fridge while you continue with the rest of this yummy fajitas recipe.

Step 2

Peel the onions. Chop the peppers and onions into cubes. A little tip to avoid crying eyes: take a damp paper towel and place it next to the onion you're cutting on your chopping board. You're welcome, my Friend 😉

Step 3

Sauté the peppers and onions in a pan with a little olive oil over low heat. Add salt, pepper, and your chili or Mexican spices.

Step 4

Once cooked, remove the peppers and onions from the heat and put them in a bowl. In the same pan, add the marinated chicken. Feel free to add a little olive oil if necessary. Let it cook for about ten minutes.

Step 5

Then add the onion and bell pepper mixture to the chicken. Squeeze the juice of half a lemon over everything to add a bit of acidity. Let it simmer for a few minutes.

Step 6

Meanwhile, chop your tomatoes into cubes and place them in a bowl. Also, prepare bowls for the guacamole, sour cream, salad, and grated cheese.

Take everything out of the oven and reheat the fajitas in the microwave for a few seconds; all you have to do is fill your tortillas as you like.
