To delight your taste buds with this play on textures, Gaëlle, the passionate pastry chef behind the culinary blog Gallymini Patisse, shares her own recipe for a soft, melt-in-your-mouth, and crispy brookie. Get cooking! Ingredients: Brownie: - 150g of flour - 200g of sugar - 140g of butter - 4 eggs - 250g of 75% dark chocolate - A pinch of fleur de sel Cookie: - 165g of flour - 125g of brown sugar - 1 egg - 120g of butter - 1 tsp of baking powder - 150g of chocolate chunks

The Recipe:

Preheat the oven to 175°C.
Meanwhile, melt the butter and chocolate in a double boiler and let it cool.
In a mixing bowl, whisk the eggs with the sugar until light and fluffy.
Add the chocolate and butter mixture, followed by the flour and sea salt.
Pour the batter into a 20x20 square baking dish and set aside.
For the cookie preparation, whisk the melted butter with the sugar and add the egg. Mix it all together.
Finish by adding the flour, baking powder, and chopped chocolate pieces.
Using a small spoon, place cookie dough pieces on top of the brownie batter. Bake for 30-35 minutes at 175°C.
Let it cool slightly before cutting.
Serve with a scoop of vanilla ice cream or fresh fruits and enjoy!Here it is:
