Nina Métayer's brownie recipe to recycle your Easter chocolates!

Ah, chocolate. We could eat it every single day! And if it comes in the form of a brownie with a recipe straight from Nina Métayer, who was named the best pastry chef in the world in 2023, what more could we ask for? A few months ago, the chef shared her secret recipe with our friends at the Huffpost, and since we’re nice, we decided that there's no reason you shouldn’t enjoy it too. So, ready to treat yourself?

The Ingredients

80 g of any type of chocolate
150 g of butter
2 egg yolks
3 egg whites
100 g of hazelnuts  
90 g of brown sugar
40 g of flour
10 g of cocoa powder
2 g of salt


Preparation

Step 1 :

We melt the chocolate and butter in a bain-marie, adding the salt. So far, so good, nothing too complicated! And for those who prefer to keep it simple, you can use the microwave with just a splash of water, it works too, you know…

Step 2 :

Next, we focus on the eggs. First, we whisk the yolks with half of the brown sugar. In other words: we beat them until they look nice and creamy!

Mix vigorously until the mixture thickens and turns pale. Then, whip the egg whites and add the other half of the sugar to make a meringue.

Step 3 :

We mix all the preparations. First, we add the yolk mixture to the meringue, then the amazing butter/chocolate coulis. Finally, we add the flour, cocoa, and hazelnuts.

Step 4 :

Finally, we bake everything in a preheated oven at 180 °C for at least ten minutes, adjusting based on your appliance's capabilities.
