Greek pita bread is perfect when dipped in delicious tarama or hummus, or devoured as a gyro (the Greek "kebab" with spit-roasted meat/tzatziki/tomato onion salad/oven-baked fries). It's a delight in all its forms, and a super simple recipe. It's your turn to give it a try! Ingredients: 6 pita breads - 15 cl of milk - 8 cl of warm water - 320 g of wheat flour (+ extra for dusting) - 13 g of instant yeast (or double the amount if using fresh yeast) - 1 teaspoon of salt - 1 teaspoon of sugar - 2 teaspoons of extra virgin olive oil - Fresh herbs (such as thyme or parsley) Method: 1. In a bowl, mix the sugar, yeast, milk, and water. Wait for 5 minutes for the magic to happen. 2. Meanwhile, in a large bowl, mix the flour and salt. For even more flavor, add some fresh herbs like thyme or parsley. Remember to keep the html tags as they are!
Add the yeast mixture. You should get a soft dough that separates from the sides of the bowl.
Let the dough rest in a warm place until it doubles in size (30 minutes to 2 hours).
Once the pita dough has risen well, sprinkle lightly with flour and divide into 6 pieces.
Using a rolling pin, roll out each dough ball to obtain a circle about twenty centimeters in diameter, with a thickness of about 5 mm. Turn the dough clockwise to get a nice round shape. Then score each pita with a knife or prick with a fork.
Heat a skillet, oil it with a little olive oil, and cook the pita bread over medium heat for 3 minutes on each side.
