In 2020, Justine Piluso won the hearts of all the French in Top Chef. This summer, she’s settling at Mazette, along the banks of the Seine, for a unique event. Of Italian origin, the chef shares a special bond with aperitivo. « When I’m in Italy, I see people gathered together. The scents and colors mix as the sun sets. » It's this unique culture that she’s shining a spotlight on today in one of the coolest spots in Paris, creating a menu of shareable dishes featuring Aperol. Here, the drink is featured in both glasses and dishes. 


An Italian aperitivo made in France

For 5 days, Mazette transforms into the colors of Aperol to treat you to evenings blending French aperitif and Italian aperitivo. For this special occasion, the smilingest chef...

de France has imagined a unique menu that reflects her. « This is my culinary identity. My dad is Italian, and I was born and raised in France. So I'm already having fun with combinations that resonate with me. I take elements from one culture and mix them with products from the other.»

To whip up this surprising menu, she played the little chemist to reduce, caramelize, and extract the essence of Aperol. The result? Three plates to share (on top of 3 dishes dreamed up by the chef of Mazette Johan Barre) that you can enjoy with your fingers, blending freshness and summery flavors. There’s a Comté and bacon arancini, paired with rhubarb pickles in Aperol. A smoky eggplant caviar and basil yogurt with hazelnuts and fennel seeds, and the true star of this collaboration, a shredded octopus with Aperol gel, served on a fluffy focaccia.


Aperitivo Island: a delicious summery interlude

With no beach around, there's still so much joy to be found!On the banks of the Seine, in a fresh and uncomplicated setting, Justine Piluso invites us for the perfect aperitif. Le Mazette sets the tone for what she views as the perfect aperitif: “being surrounded by friends, enjoying good food, with sunglasses, a hat, and some music.” And it’s just as well, because in addition to offering you a thoughtfully crafted menu, Aperol is hosting 3 special evenings for the launch on June 27 and for the closing on July 4 and 5. So, let’s meet at the end of June to enjoy refreshing, one-of-a-kind Spritz, made to perfection, while savoring every moment. Avanti!
