"Nothing was left to chance"
First dedicated sign, but chocolate, he knows it well. In 2020, Pierre Hermé was the guest of Nicolas Cloiseau at the Maison du Chocolat as Chef in residence for a season. His two surprise creations: the Cassis Flower (sablé with cassis pepper, Belize chocolate ganache and cassis, chocolate biscuit, cassis jelly, Belize chocolate mousse), and the Sand Rose (sweet pastry, almond praline, milk chocolate and rose ganache, creamy almond cream, rose praline). The renowned pastry chef also offers several chocolate ranges alongside his famous macarons in his current stores.
For his own chocolate shop, however, Pierre Hermé saw things on a larger scale. In a space designed by the Jouin-Manku studio, the customer is invited to stroll among several display cases and &eac.ute;shelves where the successive steps of chocolate creation are supposed to be, from the mold to the bar. Among the materials used to decorate the sign, French wood, copper, glass, and even linen. "This chocolate shrine was close to my heart. Nothing was left to chance, chocolate is everywhere. The polymorphic walls recall the shades of colors and textures, the materials, the skill of the chocolatier," the chocolatier wrote on Twitter.

To punctuate the journey, different collections of the house, offered under different names (like Twilight ?): Signature, Possession, Complices, and Meditation. Next to them, ephemeral creations with surprising flavors and varied textures will delight your taste buds, such as marshmallow flowers (with a caramel heart, be careful), spreads, single origin or filled chocolate bars, very original candies, including the Algae (Nori seaweed, Yuzu and a hint of lemon), and many other surprises. Moreover, everyone is welcomed with a chocolate Nasturtium Flower (a reference to the street) as a greeting: the perfect address to experience in this early May.
