A flawless performance
There were 17 competitors. 17 of them presented this essential bistro dish to a panel of experts, undoubtedly the most well-known and popular starter in France. And yet, after tasting and deliberation, only one remains: the talented chef Maxime Plateau.

"The mayonnaise was impeccable, the egg was cooked well, the seasoning was good, and the accompaniment was impeccable too, so that's why it won." This is a statement that leaves no room for doubt. It's a success, both in terms of cooking and taste or texture.
The young chef, very humble, welcomed this award with great dignity, not forgetting to mention the quality of the eggs presented by the other contestants. And if we listen to him, what really made the difference in this very close competition was "maybe it's the pickled red cabbage." That's an explanation that suits us.
