When Dana – who cut her teeth in the restaurant world, notably with Cyril Lignac – discovered handrolls on a train during her recent trip to Japan, it was a bit of a revelation, and especially an obvious choice for someone who has always dreamed of opening a Japanese restaurant concept in the capital. It didn't take much for her to dive into the adventure of Maki Lab, offering Parisians the chance to discover these delicious Japanese street food specialties, halfway between maki and onigiri. A rice roll filled with fish, seafood, or vegetable recipes, enjoyed wrapped in crispy, toasted nori seaweed.

We absolutely love the detail of using Erlenmeyer flasks to serve the sauce on the spot. On the other hand, there are exceptionally high-quality products, carefully selected. The fish comes from the same supplier as those used by the top Michelin-starred chefs, and they are chosen based on the seasonal catch for the new recipe of the week. The matcha, selected for its subtle and sweet aroma, comes straight from a Japanese producer, whom the manager met during one of her trips.
