The holidays haven't even started yet, and we've already found our favorite summer escape. In Saint-Cloud, the iconic Quai Ouest transforms for the summer season and welcomes Cramat', a solar concept orchestrated by Alexy Algar-Denos, who has just been revealed to the public thanks to his position as a finalist in Top Chef 2026. Until the end of September, the restaurant takes its visitors to Catalonia through a personal, generous, and truly authentic cuisine.
A Fiery Cuisine by the Seine
Cramat', which means "burned" in Catalan, sets the tone right away. Here, the embers reign supreme and tell a whole family story. The chef Alexy Algar-Denos draws from his childhood memories and Catalan roots to create a sincere menu, free of frills, where inherited recipes meet more contemporary creations. On the menu, you'll find inc.must-tries of regional cuisine like the Bulinda of hake and the traditional boles de picoulat, prepared according to the chef's grandmother's recipe. Next to these classics, the chef allows himself a few liberties with a Caesar-style confit sucrine reimagined, or a spiced lacquered cauliflower.

But the true star of the house remains cooking over fire. Grilled sardines, squid, smoked eggplants, beautiful cuts of meat, and seasonal vegetables all get their time over the coals to reveal bold and comforting flavors. A vibrant and evolving menu that follows the rhythm of summer. And on the dessert front, Catalonia shines through once again on the plate. The turrón transforms into an ultra-nostalgic version served with a beloved peanut ice cream and a generous caramel. As for the crème catalane, it gets dressed up with a surprising pumpkin seed praline.
Cocktails in the sun and holiday vibes
On the bar side, the same philosophy applies. Julien Quettier, Executive Bar Manager of Bertrand Hospitality, has crafted a menu designed as a natural extension of the cuisine. Each cocktail interacts with the dishes through common ingredients and a shared quest for balance. Smoked mezcal, pepper, strawberry, basil, apricot, or even more!
Pine nuts create delightful creations that smell of the South. A few Catalan references also make their way into the glasses, like Byrrh (made in Thuir, in the Pyrénées-Orientales) or the non-alcoholic Turrón Fizz.Check out this post on Instagram
And because a successful summer isn't just about what's on the plate or in the glass, Cramat also takes care of the vibe. Sunlit lunches, long dinners, and drinks flowing with friends... Weekends take on a whole new dimension thanks to the DJ sets scheduled every Friday and Saturday.
