Where to find the good Spanish cuisine in Paris? That’s a question that’s long puzzled the person writing these lines. A true product of Catalonia, I know all about tapas and paellas… And let’s be honest: when it’s not served in a cozy neighborhood bar in Barcelona or on a beach in Costa Brava, it just doesn’t taste the same. This poor Spaniard in Paris has searched high and low for a place that could give her a taste of home, unfortunately without success. Until the day Rosario finally arrived, a little Iberian gem that invites all of us, Parisians from near and far, to savor the real Spanish cuisine.
A slice of Spain right in the heart of Paris
At the helm of the project? Adrien Delrue, with roots spanning the Pyrenees (Rosario is his aunt!) and Théodore Ballu, who have boldly managed to bring a small piece of Spain here, right in the heart of Paris. To accomplish this, they decided to bring in someone in the kitchen who could...ui combines passion and high standards to convey the vibrant and popular essence of Iberian cuisine. After leaving the world of Michelin-starred gastronomy in Madrid, Chef José María Goñi Martinez sets up his team in Paris to showcase traditional Spanish classics with mastery and authenticity. His menu takes us on a tour of the country's regions, echoing the memory of the local terroirs.

Tapas Like They Do Down South
The place feels like a lively Barcelona tapas bar mixed with a cozy Parisian bistro, all dressed up in vibrant red that’s as inviting as it is uplifting. But let's get back to the plate, the reason we keep coming back! What’s on the menu? Exquisite carefully sourced products from the finest artisans of the Spanish culinary landscape, from the Atlantic coast to the Andalusian olive groves (and oh, how we remember that olive oil—it almost deserves an IV drip!). You can find tapas here to satisfy all your cravings for the classics, featuring a decadently gooey tortilla that will blow your mind, croquetas warm and fresh just like the ones our yaya used to make, and charcuterie "como Dios manda" with the incredible jamón ibérico Bellota. As for the main dishes, we’re invoking all the warm recipes from our mothers, aunts, and grandmothers, with homemade lentejas (lentils), iberian salchicha (sausage), or merluza en salsa verde (line-caught hake in green sauce).ill). A menu that clearly evolves over time and with the seasons.
On the drinks side, Rosario is taking a bet to help us (re)discover Spanish wines, featuring treasures from Galicia, Castile, Mallorca, and the Madrid region. A delightful range of wines to enhance your experience, which you can mix up if the mood strikes you, with a spritz, cava, or homemade vermouth. In short, all that's left for you to do is to enjoy a Spanish hour.
