It was on a sunny late morning, wandering on the Île de la Cité, that a new address caught our curiosity. It only took a few steaming bowls on a lovely terrace facing the Seine, as well as the smile of the customers savoring them, to convince us to step inside Hanoï 1988.
On the menu, typical dishes and appetizers from Huy's hometown, the young owner who cooks everything homemade. The small series of Pho soups pique our taste buds, as up until now we only knew one single recipe (apparently passed on by all the Vietnamese restaurants in the capital and served to Parisians).

It's decided, we'll have the Garlicky Pho, this pho with beef bone broth slow-cooked for 24 hours. Sautéed beef - medium-rare - with garlic, cilantro, green onion, long coriander, and bean sprouts. "That's a good choice!" exclaimed the waitress with a smile before adding, "The chef won the award for the best Pho in Vietnam, both by professionals and amateurs, thanks to this recipe."

It was enough to tantalize our taste buds. A few minutes later, the young prodigy arrives with his creation: "At home, in Hanoi, we eat soup with vinegar garlic, not lemon." The smell is intoxicating, I can't wait any longer, let's taste it. Explosion.
It took almost 10 years in Paris for me to finally have the chance to slurp a real Vietnamese Pho. The good news? Huy is about to open a second location, completely dedicated to his crazy broths.
