Just steps away from Square du Temple, a new spot has just arrived. On September 1st, Salted Boy set up its ovens in the 3rd arrondissement to open the very first Parisian boutique entirely dedicated to salted bread. After making the capital drool through several pop-ups, the trio behind the project is shifting into high gear with a permanent location where the Japanese-Korean soft bread is clearly the star.
The little bread that's winning over Paris
Behind Salted Boy, you'll find Maxime Gaffory from Basis, Stéphane Ung from Coupi Bar and Anthony Nguyen, who brings his expertise gained at Tenne Baker in Seoul. Together, they're celebrating a specialty that was still under the radar not long ago, but is sure to become Parisians' new guilty pleasure.

Known as shiopan in Japan or sogeum-ppang in Korea, salted bread is a delightful little brioche rolled around a generous block of butter. Originating in Japan and then widely popularized in Korea, with hints of croissant, milk bread, and pretzel (yes, all of that rolled into one). As it bakes, the butter melts slowly into the heart of the dough and caramelizes the outside. The result? A golden and crispy crust, while the inside stays beautifully soft. The whole thing is brightened up by a little pinch of salt on top.
Three sauce options
At Salted Boy, you can of course bite into your salted bread plain, to fully enjoy the butter-dough-salt combo. But the more indulgent crowd can also play with sweet and salty pairings and dip their brioche into one of the three sauces on offer. On the menu? A pandan cream and coconut option for a delicious twist
