In fact, the first thing we do when we arrive in Cotonou (the largest city in Benin), is rush to eat it!" Bakus tells us with a smile on his face. And he adds, "The joy of cooking and sharing our Beninese culture through food is what makes Chachanga so special. And he has finally made this little Proustian madeleine from Benin his business. However, the recipe is not simple: few can master it as well as the authentic cotonoise. It should be noted that Bakus and his brother have not made the task easier, as perfectionists as they are, they have opted for cooking the braised meat on volcanic stone. "It is indeed less harmful to health and it is a good way to preserve the taste of the meat," explains the chef, for whom serving a plate full of flavors to his customers is a mission of utmost importance.Flavors, but also quality. For the Chachenga team, there's no question of going for low-end. The meat must be exceptional, without nerves, juicy and above all organic, from sustainable agriculture and short circuit. After 3 years of research, Bakus, Wassia and Dona have finally found the ideal craftsman: a butcher who works directly with farmers to offer halal meat that is noble and tasty. In a bowl, they accompany them with cubes of sweet potatoes, slices of plantain bananas and carrot tagliatelle, all carefully prepared, peeled and cut by their magical little hands.

And if lamb or beef are the stars of Chachenga's menu, the team of chefs has also thought about the veggies. It is Wassia, a nutritionist who believes in balanced eating, who has added a mouth-watering dish to the menu, mixing seasonal vegetables, tubers, and chickpeas: believe it or not, you'll almost feel the taste of a tender chicken.
